In honor of St. Paddy’s day, I am posting a quick an easy sugar cookie, without (gasp!) chocolate. Of course you can always add chocolate frosting or sprinkles, but this recipe as it is, does not have chocolate. They are so tasty and quick to make, they may quickly become your favorite sugar cookie.
One of the reasons this cookie can be made so quickly is that there is no need to chill the dough. You can use any frosting recipe, of course, but the one with these cookies is make with cream cheese, which I love.
